Well it is for Maddison Gurrola, a food waste fighting food scientist at Mattson. In this episode we talk about some of the many things Maddison does as a food scientist, her passion for reducing food waste, protecting the planet, and the benefits of incorporating upcycled ingredients in new upcycled-certified food products. We learned about her adventurous journey to ultimately arriving at this exciting and fulfilling career with Mattson. Maddison also gives us insights on some of her personal philosophies, highs and lows about starting her own company, and some amazing wisdom she has gained through her many varied life experiences.

Maddison Gurrola
Food Scientist at Mattson
Maddison has a diverse background that blends culinary art and food science, along with a passion for creating sustainable food systems. She currently works in the food science field, doing research and product development for Mattson, an industry-leading innovation firm that helps food and beverage companies big and small to achieve their growth objectives. Maddison has been uniquely able to blend her culinary experience as a lead line cook at a James Beard Award-winning chef’s fine-dining restaurant, with her scientific food systems training, to provide Mattson clients with innovative and delicious solutions for waste prevention.
Maddison graduated with a BS in Nutritional Science from University of California, Davis. At UC Davis, she led a research project focused on food waste prevention through innovative solutions including upcycling by-products from manufacturing processes which led to a start-up which placed first in a business entrepreneurial competition. Maddison has been an active member in the food loss and waste space, she is a Green Business Council TRUE Advisor, Co-Chair for the Standards Committee of the Upcycled Food Association which was responsible for creating the certification process for upcycled foods, and holds a position for the Mattson Foundation, a non-profit which focuses on providing food security to the local community through donations and charitable events.
